Cornbread Recipe and Hints to Color Your Red Ground Canary

Here is what I use:

1 cup yellow corn meal
1 cup sifted all-purpose flour (I don't sift)
1/4 cup sugar
4 teaspoons baking powder (1 TBL + 1 teaspoon)
3/4 teaspoon salt
1/2 teaspoon color food

1 cup milk
2 eggs
1/4 cup melted shortening or oil (I use oil)

1. Mix dry ingredients
2. Add milk, eggs and shortening; mix thoroughly
3. Turn batter into a well-greased 8" square pan
4. Bake at 425 degrees 25-30 minutes, or until golden brown

Mix well with a METAL spoon. If you use a spatula to pour into your pan it will be stained. For that matter just buy one for birds. After the cornbread is cool, cut into 1" square pieces. Freeze most of the cornbread in a Ziplock type freezer bag. Put a week's worth in the refrigerator and give to the bird DAILY during the moult.

Do not give your bird watery vegetables such as head lettuce during this period. Always give the colored corn bread to your birds first thing in the morning. Other vegetables such as broccoli or vegetables that do not contain a lot of moisture should be given later in the day.
